Chipotle Morita Chili

A chipotle Morita chili is a dried ripe chili pepper used for seasoning. It is a chili which is used in Mexico and southwestern in many dishes. Morita chili names come from the word chipotle which means smoked chili. A chipotle Morita chili heat is similar to another chili-like, Tabasco Hungarian wax guajillo.

Production of Chipotle Morita Chili

Chipotle Morita chili known as jalapeno pepper is of the most representative foods of the Mexican diet. Morita chili is consumed as 7-9 kg per capita per year in Mexico. Fresh chili pepper is consumed mostly but it's also consumed as pickled dried and smoked. A chili pepper grower passes through the field many times a day for picking up the best Morita chili for the market. Its basic color is green for almost all the season but in the fall it changes its color brighten red.

 The process of Chipotle Morita chili production involves the firewood to dry and smoke the red Chipotle chili or jalapeno for almost six days. Mainly using the firewood the temperature is maintained between 65-75 Celsius.

 Firewood is a traditional way to smoke the jalapenos in which peppers are a move to a closed smoking chamber for 6 days and spread them on a metal grill for complete dry. But these days the gas chambers are used to dry them, this process is also called the smoke. jalapenos are smoked for several days until they are fully dry.

Only smoked red jalapenos are called the real chipotle Morita chili. You also smoke them in your home smoker. But be careful they dried properly.

  Use of Chipotle Morita Chili


Chipotles Morita, is a key ingredient in a recipe, impart a relatively mild but earthy spiciness to many Mexican dishes. The chilis are used to make various salsas or sauces. Chipotle Morita can be ground and combined with other spices to make a meat spice mix. Chipotle Morita is used, typically in a powdered form known as Chipotle powder, as an ingredient in homemade and commercial products as well, Some brands of barbecue sauce and hot sauce also use Chipotle Powder. Normally, when the brand used commercially, the product is advertised as having chipotle as a key ingredient in it.

Chipotles Morita is spicy and has a distinctive smoky flavor. The flesh is thick, so the Chipotle chilis are usually used in a slow-cooked dish rather than raw or fast cooked dishes. When chilies are overcooked, they can get very bitter.

For some traditional Mexican sauces, chiles are soaked in warm water until they become pliable and then can be added to a dish. The different forms(powder, green, red) of chipotle can be added to soups and stews, and in the braising liquid for meat.
