Garlic is a perennial herb that is closely related to chives, onion, and leek. It is commonly used in Asian, Middle Eastern, Latin American, and North African cuisines. Although it is appreciated by most English cooks today, the herb was not generally used for culinary purposes in that part of the world until the 16th century. In fact, the herbalists considered the herb a “rustic's theriac,” meaning a heal-all.
Minced garlic is easy to use and keeps for a long time if properly stored. Use it in cooking as you would fresh minced garlic.
