When prepared traditionally, zhoug, a popular Middle Eastern condiment, begins with a blend of garlic and fresh, hot chiles that are crushed together, then further seasoned with spices. Zhoug (sometimes transliterated as "zhug" or even "skhug") can be made with either red or green chiles, either of which can be either blazingly hot or just mildly spicy.
Although zhoug (from the Arabic word for "pound" or "crush") was originally a Yemeni specialty, it was brought to Israel by immigrating Yemeni Jews. It is now closely associated with Israeli cuisine, especially with Israeli-style falafel sandwiches. Many falafel shops make their own zhoug, some even making it fresh daily.
Zhoug is also frequently used as a condiment served on hummus, dolloped over the creamy, smooth spread to provide contrasting texture and flavor. Commercially prepared fresh zhoug is just starting to be available in the United States, but it is generally still hard to find, except for a few products distributed by companies better known for manufacturing hummus.
Our Zhoug Seasoning is a unique combination of chile powders, granulated garlic, and a custom blend of herbs and spices. It replicates the flavor of authentic, medium-heat green zhoug, with spicy notes that linger on the palate.
