The potato (Solanum tuberosum) is a root vegetable, part of an annual plant in the nightshade family. There are over 1,000 different types of potatoes worldwide, the vast majority of which can be traced to varieties that originated in the Peruvian-Bolivian Andes. Potatoes were introduced to Europe by Spanish merchants in the second half of the 16th century as part of the Colombian exchange. Today they are a staple food for large portions of the world’s population.
