This specific brand of Alaria called "Wild Atlantic Wakame" (Alaria esculenta) is biologically and nutritionally similar to Japanese wakame (Undaria pinnatifid). Although it required a slightly longer cooking time it provides a more wild, yet delicate taste which makes it very ideal for miso soup. The mild flavor allows it to complement the other ingredients without overwhelming them.
