Rock candy (also known as sugar candy or rock sugar or crystal candy), is a type of confection composed of relatively large sugar crystals. Originating from Persia (where its called 'Nabat') they are often colored with various natural colors and infused with fruity or flowery essences. These ones, in particular, are infused with saffron, which gives it its unique color, flavor, and aroma.

Rock candy is often dissolved in tea. It is an important part of the tea culture of many places, where a lump of rock sugar is placed at the bottom of the cup.
