The Chipotle Meco Chili is smoked red ripe jalapeño. Primarily used in Mexican cuisines and the like, there are two types of chipotle, Meco and Morita. The Meco chilis are the ones which are left longer on the bush, with lost moisture during their harvest. Meco chilis are grayish tan, very stiff and, looks like a cigar butt. Meco chipotles have a more intense, rich flavor, which makes it a perfect fit for the special dishes. The pepper has a smoked hickory flavor, which becomes a bold addition to the Mexican sauces, soups and dry rubs.
